QUICK AND ZESTY VEGETABLE
ITALIAN SOUP
 
1 lb. ground beef
1/2 c. chopped onion
2 (14 1/2 oz.) cans Del Monte Italian style tomatoes
2 (13 3/4 oz.) cans beef broth
1 (17 oz.) can Del Monte mixed vegetables
1/2 c. uncooked med. egg noodles
1/2 tsp. oregano (optional)

In large pot, brown meat and onions. Cook until onion is tender; and drain. Salt and pepper to taste. Stir in remaining ingredients. Bring to boil. Reduce heat. Cover and simmer 15 minutes or until noodles are tender. Makes 8 (1 cup) servings.

SUBSTITUTION: 2 chicken breasts and 2 cans chicken broth for the ground beef and beef broth.
