RHUBARB COBBLER 
BASE:

1 c. sugar
Bisquick or pancake mix
1 tsp. grated lemon peel
4 c. rhubarb, cut in small pieces

Mix well and put in 8 or 9 inch baking pan.

TOPPING:

1/2 c. pancake mix or bisquick
2/3 c. sugar
1 egg, beaten
1/4 c. melted butter

Mix until mix resembles coarse crumbs. Sprinkle over rhubarb bases, dribble melted butter over top. Bake 35 to 40 minutes at 375 degrees. Serve with whipped cream or ice cream.
