RHUBARB COBBLER 
1 c. sugar
1/3 c. pancake mix
1 tsp. lemon peel, grated
4 c. rhubarb

TOPPING:

3/4 c. pancake mix
2/3 c. sugar
1 beaten egg
1/4 c. melted butter

Combine and mix first 4 ingredients. Place in 8" or 9" square pan. Combine pancake mix and sugar, stir in egg until mixture resembles coarse crumbs. Sprinkle evenly over rhubarb mixture. Drizzle with melted butter. Bake at 350 degrees for 35 minutes or until browned.
