BLUE CHEESE BAKING POTATOES 
4 lg. baking potatoes
Vegetable oil
8 slices bacon
1 c. plain yogurt
1/2 c. milk
1/4 c. butter
1/4 c. chopped green onion
2 to 3 tbsp. crumbled blue cheese
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. pepper
Paprika

Scrub potatoes thoroughly and rub skins with oil. Bake at 400 degrees for 1 hour or until done.

Allow potatoes to cool to touch. Cut in half lengthwise, carefully scoop out pulp, leaving shells intact, mash pulp.

Cook bacon until crisp, drain and crumble. Combine potato pulp, bacon and remaining ingredients except paprika. Mix well. Stuff shells with potato mixture and sprinkle with paprika. Bake at 400 degrees for 15 to 20 minutes or until thoroughly hot. Serves: 8.
