PUMPKIN CAKE | |
1 box yellow cake mix 1 stick butter, melted 1 egg 1 lg. can pumpkin 3 eggs, slightly beaten 1/2 c. brown sugar 2/3 c. evaporated milk 1/4 c. white sugar 1 1/2 tsp. cinnamon Reserve 3/4 cup of cake mix for streusel topping. To the remaining mix add butter and egg; mix well. Pat in a greased and floured 9"x13" pan. Blend together and pour over cake layer: pumpkin, eggs, both sugars, milk and cinnamon. STREUSEL TOPPING: 3/4 cup of reserved cake mix, 1/2 cup white sugar, 1/2 stick butter, room temperature. Mix together and sprinkle over pumpkin mixture. Sprinkle 1/2 cup chopped nuts, if desired. Bake at 350 degrees for 55 minutes. Serve plain or with Cool Whip. |
