CORN LIGHT BREAD 
3 c. corn meal
1 c. flour, sifted
1/2 c. sugar
pinch of salt
1 tsp. baking powder
1 tsp. baking soda
3 c. buttermilk
1 egg
1/2 c. shortening

Mix all ingredients together except the shortening. Melt shortening in skillet, and pour in the mixture, leaving a small amount to cover the bottom of the skillet. Pour mixture in skillet.

Bake 350 for 1 hour.

Very good with BBQ or any pork dish. Good toasted for breakfast with jelly.
