CITRUS ROMAINE SALAD WITH
STRAWBERRIES
 
2 navel oranges
1 tbsp. vinegar
1 tbsp. honey
1 1/2 tsp. veg. oil
1/4 tsp. salt
1/8 tsp. pepper
5 c. tightly packed shredded Romaine lettuce
1 c. halved fresh strawberries
1/2 c. vertically sliced purple onion

Peel and section oranges over a bowl. Squeeze membranes to get juice (2 tablespoons). Combine this juice, vinegar and next 4 ingredients. Stir. Combine last 3 ingredients in bowl and toss well. Add unused orange sections. Pour dressing over lettuce mixture. Makes 7 servings.
