MOM'S MEXICAN FRUIT CAKE 
1 (20 oz.) can undrained crushed pineapple
2 c. plain flour
2 c. sugar
2 tsp. baking soda
2 eggs
1 c. chopped walnuts or pecans
1 tsp. cinnamon

Preheat oven to 350 degrees. Blend all ingredients. Pour into a greased 13 x 9 inch pan and bake 45 minutes and 35 minutes if glass dish is used.

CREAM FROSTING:

Blend until smooth the following ingredients and frost cake while hot: 1 (8 oz.) pkg. cream cheese 1 stick melted butter Vanilla
