CHICKEN SQUISITO 
4 tbsp. olive oil
4 boneless skinless chicken breasts
salt, pepper, onion and garlic powder
1 medium onion, diced
1 (14.5 oz.) Italian seasoned diced tomatoes
1/2 c. chicken broth
1 c. shredded Mozzarella cheese
1/3 c. grated Parmesan
1/3 c. grated Romano

Preheat oven to 375°F. Season chicken with powders, salt and pepper. Heat oil in an oven-safe pan over medium-high heat. When hot, add chicken and saut 2 minutes on each side. Remove chicken. Sauté onions in pan for 4 minutes. Add tomatoes and broth. Cook for 8 minutes to blend flavors. Place chicken in pan. Stir to combine. Mix cheeses together and sprinkle over chicken.

Bake about 15 minutes. Serve with rice or pasta.
