PUMPKIN BREAD #1 | |
3 c. sugar 1 c. oil 2 c. pumpkin, mashed 4 eggs 2 tsp. baking soda 1 c. chopped nuts 1 c. dates (optional) 3 1/2 c. sifted flour 2/3 c. orange juice 1 tsp. cinnamon 1 1/2 tsp. salt 1 tsp. nutmeg 1 c. raisins Place all ingredients except raisins and nuts and dates in bowl and mix with mixer. Add 1 cup nuts and 1 cup raisins (dates, if using). Bake 1 hour at 350 degrees in 4 greased and floured 1 pound coffee cans. Each can will be half full before baking and will rise to top of can. Let cool slightly in can. Remove and wrap in Saran Wrap. Serve sliced with whipped topping, cream or as a tea sandwich with cream cheese. |
