PORK PUEBLO STYLE 
2 lbs. pork, cut in cubes as for stew
2 tsp. salt
6 green chile, canned or fresh bell peppers may be used
1 onion, minced
1 clove garlic, mashed
3 lg. tomatoes, peeled and chopped

Place meat cubes in water, about 1 cup. Cover, bring to a boil, then simmer until water disappears and pork is brown and beginning to fry in its own fat. Add onion, tomatoes, garlic, and green chiles or bell pepper. Allow to simmer until flavors blend. Great with flour tortillas and refried beans.
