SPICY BEEF TURNOVERS 
CRUST:

1 1/2 c. all-purpose flour
1/2 tsp. salt
6 tbsp. (3/4 stick) cold butter, cut into pieces
1/4 c. (1/2 stick) cold unsalted butter, cut into pieces
5-6 tbsp. ice water

In a large bowl, combine the flour and salt. Cut in the butter and butter, using a pastry blender or 2 knives, until the mixture resembles coarse meal. Add 5 tablespoons of the ice water and stir lightly with a fork until the mixture forms a dough. (Add the remaining tablespoon water if the dough crumbles.) Wrap the dough in plastic wrap and refrigerate for at least 1 hour. It is important to keep the dough cold for ease of rolling.

FILLING:

2 tsp. olive oil
1 sm. yellow onion, finely chopped
1 clove garlic, finely chopped
8 oz. ground beef
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/8 tsp. ground cinnamon
1/8 tsp. cayenne pepper
1/4 tsp. salt
2 tbsp. finely chopped dried apricots (6 halves)
1 lg. tomato, chopped (about 3/4 c.)

Heat the oil in a 12-inch skillet over moderate heat. Add the onion, and saute until soft, about 15 minutes. Add the garlic and beef, and saute until the beef is browned, about 5 minutes. Stir in the coriander, cumin, cinnamon, cayenne and salt, and saute 30 seconds more. Add the apricots and tomato and simmer, uncovered, until the mixture has thickened and is a rich mahogany color, about 25 minutes. Let cool to room temperature. (Can be made ahead to this point, covered, and refrigerated for up to 2 days.)

Meanwhile, preheat the oven to 350 degrees. Roll out the cold dough to a 1/8 inch thickness. Cut it into 3-inch squares and place 2 tablespoons filling in center of each. Dampen 2 adjacent sides of each square with water, then fold over to form a triangle. Crimp the edges with a fork. Bake on greased baking sheets until golden brown, 15-20 minutes.

Cool on wire racks. Serve hot or at room temperature. When cool, the turnovers can be stored, wrapped in aluminum foil and frozen for up to 2 months. To reheat, bake the foil-covered turnovers in a preheated 375 degree oven until heated through, 25-30 minutes.
