SWEET POTATO SALAD 
5 c. water
1 1/2 lbs. sweet potatoes
2 med. stalks celery, sliced thin
1 sm. onion, thin
1 med. orange, peeled and sectioned
1/2 c. mayonnaise
1 or 2 tbsp. orange or pineapple juice
1/2 tsp. dry mustard
1/2 tsp. grated orange peel
1/4 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
Lettuce leaves

Heat water to boiling; add potatoes. Heat to boiling, reduce heat. Cover and simmer 30 to 35 minutes. Drain potatoes; slip off skins. Cut potatoes into 1/2 inch cubes. Add celery, onion and orange. Mix rest of ingredients except lettuce leaves. Pour on vegetables and orange. Stir to blend. Refrigerate 2 hours. Serve in lettuce-lined salad bowl.
