5-6 firm sweet potatoes, do not overcook
1 green pepper, diced
1 red pepper, diced
3-4 stalks celery, diced
1 lg. sweet onion
5-6 hard boiled eggs, diced
Dry parsley

Mix well with enough Miracle Whip to hold together. Chill 3-4 hours.
