FRESH VEGETABLE MEDLEY | |
1/2 c. water 2 tbsp. butter 1/2 tsp. salt 1/4 tsp. pepper 1/8 tsp. garlic powder 3 med. carrots, scraped & diagonally cut into 1/4" slices 2 med. size green peppers, cut into 1/2" pieces 1 lg. onion, cut into 8 wedges 2 med. yellow squash, cut into 1/4" slices 2 med. zucchini, cut into 1/4" slices 1 lb. fresh mushrooms, sliced 1 c. shredded cheddar cheese Combine water, salt, pepper, garlic powder and butter in a Dutch oven; bring to a boil. Add carrots; cover, reduce heat and simmer 5 minutes. Add green pepper, onion, yellow squash and zucchini; cover and simmer 10 minutes. Stir in mushrooms; cover and simmer 3 to 4 minutes. Drain. Place vegetables in a lightly greased 13"x9"x2" baking dish; sprinkle with cheese. Broil just until cheese melts. Serves 8. |
