CHILI CON CARNE 
2 tbsp. bacon fat
3/4 c. chopped onion
1/2 tsp. salt and pepper
3 tbsp. chili powder
1 (6 1/2 oz.) can tomato paste
1 (4 oz.) can kidney beans
1 or 2 cloves garlic
1 lb. ground beef
1 tbsp. flour
1 (28 oz.) can crushed tomatoes

Into hot bacon fat, add onions and garlic. Cook until they turn brown and add meat. Sprinkle flour, salt, pepper and chili onto meat and cook until browned.

Drain kidney beans and add them to meat. Now add tomato paste and crushed tomatoes. Cover and simmer gently for an hour. Stir to keep from sticking.
