PRONTO CHILI CON CARNE | |
1 tbsp. flour 1/2 c. cold water 1 tbsp. oil 1/2 c. chopped onion 1 lb. lean ground beef 1 tbsp. chili powder or to taste 1 (1 lb.) can stewed tomatoes 1 (5 oz.) can red kidney beans in tomato sauce Salt to taste Tortillas or hero rolls 1 c. grated Monterey Jack or cheddar cheese Mix flour into cold water and stir until smooth. Set aside. Heat oil in wok. Add onion; stir fry until soft. Add meat and stir fry until no longer pink. Drain excess rendered fat. Add chili powder, tomatoes and beans. Bring to a boil. Lower heat, cover and simmer about 10 minutes. Stir in flour water mixture. Simmer until sauce thickens. Season with salt to taste. Serve over heated tortillas, or in split toasted hero rolls. Top with grated cheese. Makes 6 to 8 servings. |
