PINEAPPLE MUFFINS 
3/4 c. vegetable oil (or more for a crispier top)
1 c. sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 (8 oz.) can crushed pineapple, with juice
1/2 tsp. salt

Mix ingredients together and pour into greased muffin tins or tins lined with muffin papers. Bake at 350 degrees for 20 minutes. Makes 2 dozen.
