PEASANT SALAD 
2 sm. pita bread
1 sm. bag red radishes
3 cucumbers
1/2 head lettuce
2 tomatoes
3 onions
1 green pepper
1 clove garlic, mashed with salt
1/4 c. olive oil
1/4 c. lemon juice
Salt and pepper to taste
2 onions, 2 tomatoes for garnish

Sprinkle cold water over bread and set aside. Chop vegetables and put into a serving bowl.

Squeeze excess water from bread and cut into pieces. Add to the vegetables in the serving bowl. Add garlic, lemon juice and oil to salad. Add salt and pepper to taste; toss well. Slice or chop onions and tomatoes for garnish.
