2 c. flour (self-rising) 3 eggs (3/4 carton egg substitute) 2 c. sugar 3/4 c. vegetable oil 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice 1 jar Jr. baby food prunes 1/2 c. black walnuts Combine all ingredients, stirring until smooth. Pour into greased 9 x 13 x 2 inch pan. Bake at 350 degrees for 1 hour. | |

Great flavor and an easy cake to prepare. Next time I make it, though, I don't think I'll bake it for an hour--it came out over-done. 40-45 minutes might be sufficient. I did add a maple-cinnamon glaze on top which was very tasty :)
