FRIED RICE 
2 c. cooked white rice
1 egg (lg.)
3 or 4 med. slices ham, diced
2 green onions, diced (stalks and all)
2 or 3 tsp. soy sauce
Cooked shrimp (sm.) (optional)
2 tbsp. oil

Fry shrimp in hot oil in skillet or wok (optional). Add cooked rice to skillet and fry. More oil may be needed at this point. Add by tablespoon if necessary. Add egg by cracking egg into center of rice and stir quickly into rice. Next add diced ham to hot mixture, and after a minute add soy sauce and green onions. Stir; cook for a few minutes on low heat, then remove and serve immediately.
