CORN FRITTERS | |
1 3/4 c. sifted flour 2 tsp. baking powder 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. pepper 2 eggs 1 c. milk 1 tbsp. oil 1 1/2 c. whole kernel corn, drained Combine all dry ingredients. Combine all liquids; add to dry ingredients. Just stir to mix, do not over mix. Add well drained corn just to stir mix. Drop into hot oil. When fritters rise to top, turn. Fry 3-5 minutes. Drain on paper towels. Serve hot with syrup or use as a vegetable dish. |
