CORN FRITTERS 
1 can (16 oz.) whole kernel corn
Milk
1 1/2 c. flour
2 tsp. baking powder
3/4 tsp. salt
1 egg, beaten

Drain off 1 can of corn. Add milk to the drained liquid to measure 1 cup.

Combine 1 1/2 cup flour, 2 teaspoons baking powder and 3/4 teaspoon salt. Combine 1 beaten egg, milk mixture and corn. Add to dry ingredients. Mix just until flour is moistened.

Drop batter from tablespoon into deep hot fat (375 degrees). Fry until golden brown about 3 minutes. Drain on paper towels. Serve with warm maple syrup. Makes about 18 fritters. (Feeds 3-4.) Double recipe for more.
