CORN FRITTERS 
Vegetable oil
1 c. Gold Medal all-purpose flour
1 tsp. baking powder
1 tsp. salt
2 eggs
1/2 c. milk
1 tsp. vegetable oil
1 can (16 oz.) whole kernel corn, drained

Heat oil (3 to 4 inches) in deep-fat fryer or electric skillet to 375 degrees. Mix remaining ingredients except corn with hand beater until smooth. Stir in corn. Drop by rounded tablespoonfuls into hot oil. Fry until deep golden brown, about 5 minutes; drain on paper towels. Serve with maple flavored syrup if desired. 6 to 8 servings.

If using self-rising flour, omit baking powder and salt.

Ham Fritters: Omit salt and corn. Stir in 1 cup cut-up fully cooked smoked ham.
