RECIPE COLLECTION
“SNICKERDOODLES” IS IN:

SNICKERDOODLES 
2 eggs
2/3 cup oil
2 tsp. vanilla
3/4 cup sugar
2 cups all-purpose flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon or 2 tsp. grated lemon rind
1/2 cup sugar, for rolling

Heat oven to 400°F.

Beat eggs with fork, stir in oil, vanilla and lemon rind (if using). Blend in 3/4 cup sugar until mixture thickens.

Blend flour, baking powder, and salt; add to mixture.

Roll into 1-inch balls. Mix 1/2 cup sugar and cinnamon. Roll balls in sugar mixture.

Place on baking sheet, criss-cross with fork. Place 2 inches apart on ungreased baking sheet.

Bake at 400°F for 8 to 10 minutes. Remove immediately from baking sheet.

Variations: You may omit cinnamon and use 2 teaspoons lemon rind in batter, roll in sugar and bake.

This is very bland. Needs butter and something else for flavor. After first batch in oven, tried to add flavor, gave up and threw out. cookies takes like bland bread.

Sorry to hear that. Cookie dough is nearly always salvageable unless overbaked. If too dry, add shortening or milk, if dough is too sticky, add a little flour. If dough is bland, add more flavorings; vanilla, lemon rind, spices such as cinnamon, nutmeg, allspice, mace, cloves, ginger, etc. Liqueurs such as brandy, rum, kahlua, anisette, amaretto, strega, etc. The additions you can add to punch up the flavor are endless.

Just out of curiosity, did you use all of the flavorings called for in the recipe or did you omit some of them? A recipe with 2 tsp. vanilla and 2 tsp. lemon rind in only 2 cups of flour wouldn't be bland unless your vanilla was a few years old and you didn't use fresh lemon rind. Maybe it's time to toss out the old spices!
