POTATO PUFFS 
1/3 c. instant nonfat dry milk
1/3 c. water
2 c. mashed potatoes
1 med. onion, minced
1 egg, beaten
1 tsp. salt
1/8 tsp. cayenne
1 c. diced bread crumbs
1/2 c. grated Parmesan cheese
4 tbsp. melted butter

Beat the instant milk and water until thick and smooth. Add the potatoes, onion, egg, salt and cayenne. Form in small balls. Mix together the bread crumbs, cheese and butter. Roll the potato balls in the crumb mixture and place on a buttered baking sheet. Bake at 350 degrees for 1/2 hour or until golden brown.
