GRAPEFRUIT PIE 
40 lg. marshmallows
5 or 6 med. grapefruits (pink)
1 (8 oz.) Cool Whip
3 tbsp. water
1 tbsp. almond extract
2 (9 inch) baked pie crusts (not deep dish)

In microwave, dissolve marshmallows with water, 1 1/2 minutes. Stir until smooth and chill in refrigerator until almost thick. Add almond extract and grapefruit sections (well peeled and cut up). Fold in half of the Cool Whip and chill until slightly thick. Pour into baked pie shells and chill almost 2 hours. Cover pies with remaining Cool Whip and garnish with almonds. Makes 2 pies.

Since microwave ovens vary in power, you may need to adjust your cooking time.
