FAT-FREE BANANA MUFFINS 
1 c. whole wheat flour
1/2 c. white flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
2 egg whites
1 c. ripe banana, mashed
1/3 c. skim milk
1/3 c. corn syrup

Grease 12 muffin tin cups. Combine flours, sugar, baking powder, baking soda, salt and cinnamon and stir thoroughly. In a large bowl, beat egg whites lightly with a wire whisk or fork. Stir in mashed banana, milk and corn syrup. Add flour mixture and stir until well blended. Spoon into prepared muffin cups. bake at 400 degrees for 20 to 25 minutes or until firm to the touch. Cool in pan for 5 minutes, then remove and cool on a wire rack. 1 serving = 1 starch, 1 fruit.

Doctor tells us stay away from whites... also sugars... do you have a substitute for corn syrup and sugars?

Hi Angela,

You might want to try molasses or honey. They will change the texture of baked goods but are still good.

For molasses, try 3/4-1 cup for 1 cup of sugar. For honey, substitute 1 cup honey for 1 cup sugar, and when making cakes, omit 1/4 cup of the liquid.

You'll probably need to do some experimenting - let us know your results!
