FRENCH ONION SOUP 
1 lg. onion (Spanish or Bermuda)
3 tbsp. butter
4 c. beef bouillon
1 tbsp. tomato paste
Croutons
Mozzarella or Swiss cheese, sliced

Cut 2 cups of onions into 1/4 inch slices; cut in half and separate. Melt 3 tablespoons of butter on medium heat and add onions. Brown 15-20 minutes, stirring with a wooden spoon only.

In another pot, heat 4 cups of beef bouillon. Add onions when cooked. Also add salt, pepper, 1 clove of garlic and 1 tablespoon of tomato paste. Simmer 20 minutes, covered. Put into individual bowls. Put croutons on top and then 1 slice of cheese and broil until golden. Serves 2.
