MINESTRONE 
1 c. dried navy beans
6 c. water
2 beef bouillon cubes (added to water)
1 eggplant, peeled and chopped
2 c. sliced mushrooms
1/2 c. chopped celery (with leaves)
1/2 c. chopped onion
1 clove garlic, minced
3 tomatoes, peeled and cut up
1 c. macaroni
1 zucchini, thinly sliced
1 1/2 c. shredded cabbage
1/2 c. kohlrabi or turnip, peeled and diced
1/2 c. chopped broccoli
1/2 c. green beans
1/2 lb. Italian sausage, sliced

Ahead of time boil beans in water for 2 minutes; cover and let stand one hour. Simmer beans 1 1/2 hours. Cook in oil for 5 minutes the eggplant, mushrooms, celery, onion, garlic and sausage. Add to beans now and simmer for 15 minutes the tomatoes and macaroni, salt (1 1/2 teaspoons) and the pepper (1/4 teaspoon). Add remaining vegetables and simmer 15 minutes.
