CHRISTMAS MORNING EGG CASSEROLE 
4 slices bacon, cut into little strips
1/2 lb. chip dried beef, shredded
1/2 c. butter
8 oz. can mushrooms
1/2 c. flour
1 qt. milk

Saute bacon, remove from pan. Pour off most of bacon dripping. Add beef, mushrooms and butter to pan. When butter is melted sprinkle flour over beef. Stir thoroughly and slowly add milk. Continue to stir until mixture thickens. Add bacon, set aside.

EGGS:

1/4 c. butter (melted in large pan)
16 beaten eggs
3/4 tsp. salt
1 c. evaporated milk

Beat eggs, salt, and milk. Cook until scrambled softly.

Assemble: Grease large shallow baking dish. Pour half of the sauce on bottom of dish. Carefully spoon eggs over sauce. Top with remaining sauce. Cover with foil. Bake at 275 degrees for 1 hour. (If frozen thaw before baking.)
