HEARTY FISH CHOWDER 
1 lb. frozen cod or haddock, partially thawed & cubed
1 lg. onion, chopped
4 tbsp. butter
2 c. water
2 tsp. salt
1/2 tsp. basil
1/4 tsp. pepper
1 can corn
1 can evaporated milk
3 lg. potatoes, cubed

In large kettle, saute onion in butter until soft. Add potatoes, spices and water. Cover and simmer 15-20 minutes until potatoes are tender. Place fish on top (don't stir). Simmer 15-20 minutes more. Add evaporated milk and top with fresh parsley if you have some. Heat through, but do not boil after adding milk.

Tastes great reheated, but take care not to boil it. Serves 6-8.
