JOAN'S FISH CHOWDER 
2 tbsp. butter
1/3 c. chopped onion
2 c. diced potatoes
2 c. water
2 tsp. salt
1/8 tsp. pepper
Pinch of sugar
1 lb. fresh or frozen haddock
1 can evaporated milk

Place first 7 ingredients in pan and broil gently 10 to 15 minutes. Add cut up haddock and boil 8 minutes. Add can of evaporated milk (I use skimmed milk) and reheat slowly, do not boil.
