STRAWBERRY SHORT CAKE TRIFLE | |
1 pt. fresh strawberries 2 tbsp. sugar 2 c. homemade or canned vanilla pudding 1 (3 oz.) pkg. cream cheese, softened 2 c. short cake, pound cake or lady fingers, cubed (1/2 inch) Remove 3-4 strawberries for garnish. Hull and slice 1 cup remaining berries. Arrange along side a clear straight sided 1 1/2 quart bowl or dish. Place remaining berries in blender or processor; add sugar, cover and puree. In mixer bowl, beat pudding and cream cheese until combined. Place half the cake cubes in the bottom of the dish. Pour half of the pureed berries over cake. Top with half pudding mix. Repeat; cover and chill for up to 2-3 hours or more. Top with reserved berries. 6-8 servings. |
