SWEDISH PINEAPPLE CAKE | |
2 c. self-rising flour 2 c. sugar 2 eggs 1 tsp. vanilla 1 1/2 tsp. baking soda 1/2 tsp. salt 2/3 c. chopped pecans 1 (20 oz.) can crushed pineapple Mix ingredients according to order, except beat eggs before adding to mixture. Mix well and pour into a 9x13 inch ungreased pan. Bake at 350 degrees for 35 minutes. Top cake with frosting below while cake is warm. FROSTING: 1 (8 oz.) cream cheese, softened 1/2 c. butter, softened 1 box confectioners' sugar Chopped nuts Mix softened cream cheese and butter, then mix sugar. Spread over warm cake and sprinkle with nuts. |
