FISH PLUKI 
1 - 1 1/2 lb. fresh fish
Salt and pepper
Oregano
1/2 c. olive oil
3 fresh Italian plum tomatoes
3 scallions, chopped (use 6 if onions are thin)
1 c. fresh parsley (chopped)
2 fresh garlic cloves (minced fine)
20 Keebler Club crackers (ground fine)
Butter
1 lg. onion, sliced thinly
1 lemon, sliced thin
1 c. water

Place fish in a greased baking dish or pan and sprinkle the fish with salt and pepper, oregano. Sprinkle olive oil over all the fish. Lay top of fish with sliced tomatoes, then add the scallions and parsley over the tomato layer. Sprinkle on the chopped garlic. Top all with crushed club crackers. Dot the top with butter and decorate with thin onion rings and lemon slices. Add water. Bake at 350 degrees for 45 minutes. Serves 6. Serve with salad and hard crust Italian bread.
