POEBLO CHICKEN 
3 c. cooked rice, white or brown
3 c. chicken breasts, chopped in cubes
1 c. olives, sliced
1 c. diced green chilies
1 c. stewed tomatoes or 3 whole fresh tomatoes (or tomato sauce)
1 c. sour cream
2 c. Monterey Jack
Cheddar cheese

Mix together and put in 9 x 13 inch pan. Put sour cream over top. Add cheese, mixed, grated and spread over top for last 5 or 10 minutes. Bake at 350 degrees for 30 minutes.
