COUNTRY HAM WITH RED - EYE GRAVY 
6 slices country ham
1/4 c. brown sugar
1/4 c. butter
1/2 c. strong black coffee

In a heavy frying pan, saute ham in butter until light brown, turning several times. Remove ham from pan and stir brown sugar into pan drippings; cook over low heat, stirring constantly, until sugar melts. Add coffee; simmer and stir 5 minutes until mixture is a rich red-brown color.
