CORN WITH ZUCCHINI AND TOMATOES 
2 tbsp. salad oil
2 c. corn cut from cob (about 4 ears)
2 c. diced tomato
2 c. sliced zucchini
1 1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. ground cumin
1/4 tsp. pepper

In a large heavy skillet, place the salad oil. Add fresh corn sliced from cobs, the diced fresh tomatoes and the zucchini, sliced 1/4" thick. Sprinkle with salt, sugar, cumin and pepper. Cover tightly and steam, saute for 10 minutes or until the zucchini is tender crisp. Stir to mix well and serve hot with grilled meat.
