POACHED PEARS IN BUTTER RUM SAUCE | |
4 med. pears 1/2 c. brown sugar 1/4 c. apple juice 1/2 c. whipping cream 1/4 tsp. ground mace or nutmeg 1/4 c. cold butter, cut into pieces 1/4 tsp. rum flavoring Pare pears, leaving stems on. Carefully remove cores from bottoms, leaving tops intact. Stand pears upright in baking dish. Sprinkle with mace, brown sugar and dot with butter. Pour in apple juice and rum flavoring. Place cover on baking dish. Bake in 350 degree oven until pears are tender, 45 to 50 minutes. Remove pears to warm individual serving bowls; keep warm. Pour cooking liquid into small saucepan. Stir in cream. Heat to boiling stirring occasionally, until sauce is reduced by about 1/3 and slightly thickened. Pour over pears and serve hot. |
