BREAKFAST COFFEE CAKE 
4 tbsp. butter
1 egg or Egg Beater substitute
1/2 c. skim milk
1 c. unbleached flour
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt

Melt butter and cool slightly. Mix with egg and milk beaten together. Sift flour, sugar, baking powder and salt together. Pour liquid ingredients into dry ingredients and stir until smooth. Pour into a greased 8-inch square pan or loaf pan.

Sprinkle with a mixture of 2 tablespoons sugar and 1/2 teaspoon cinnamon. Bake 15 minutes at 375 degrees or until done when pierced with pick.
