HOMEMADE PANCAKES 
2 c. self rising flour
2 tbsp. oil
1 3/4 c. to 2 c. milk
2 tbsp. sugar
2 eggs

Mix all ingredients together. Heat griddle or skillet until water beads when dropped. Cook until golden.

NOTE: For buttermilk pancakes add 1/4 teaspoon baking soda and substitute milk for 1 3/4 cup buttermilk. If desired, you can add 1 cup blueberries or 1/2 cup chopped apples with 1/4 teaspoon cinnamon.
