EGG COLLOPS 
1 tbsp. butter
1 tbsp. onion, finely chopped
2 tbsp. green pepper, finely chopped
4 lg. hard-boiled eggs, chopped
1/2 c. cream of celery soup
Salt & pepper
Flour
1 egg, well beaten
2 tbsp. water
Fine dry bread crumbs
Oil for deep frying

Melt butter in small saucepan. Add onion and green pepper; saute until tender. Combine eggs, vegetable mixture, soup, salt, and pepper in mixing bowl; mix well. Form into 8 croquettes. Dredge lightly in flour. Beat egg with 2 tablespoons water. Dip croquettes in egg wash, then in bread crumbs. Pat so that bread crumbs adhere thickly to croquettes. Heat oil in deep fryer to 365 degrees. Fry croquettes 2 at a time until golden. Drain well. Serve. Makes 4 servings.
