COCONUT POUND CAKE 
2 sticks butter
1/2 c. Wesson oil
6 eggs
3 c. sugar
4 c. plain flour
1 c. milk
2 tsp. vanilla
1 c. coconut

Cream butter, sugar and Wesson oil until light and fluffy. Add eggs, one at a time, beating after each addition. Add flour, alternately with milk saving a little flour to mix with coconut. Blend in coconut and bake in 10 inch tube pan that is sprayed with Pam, heat pan for 5 minutes before pouring in batter. Bake at 300 degrees for 1 hour and 45 minutes.
