STRAWBERRY BREAD 
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 c. sugar
2 (10 oz.) boxes frozen, sliced strawberries, thawed
1 c. chopped walnuts or pecans (optional)
4 eggs, well beaten
1 1/4 c. oil

Sift together first 5 ingredients into a large bowl. Make a well in the center. Mix remaining ingredients and pour into the well. Stir enough to dampen all well. Bake at 350 degrees for 45 minutes to 1 hour. Flavor is better the second day. Makes 3 small, 2 large, or 2 miniature loaves (reduce time and temperature for miniature loaves).
