SAUSAGE CASSEROLE 
1 lb. Hillshire Farm or Eckrich sausage
1 lg. onion
1 tbsp. vegetable oil
1 pkg. Au Gratin Potato Mix
2 1/2 c. hot water
1/4 tsp. pepper
4 med. carrots
1 pkg. frozen chopped broccoli
1 c. shredded cheddar cheese

Cut sausage in 1/2 inch slices and chop onion. Saute in oil for 5 minutes. Stir in potato mix, salt, and pepper. Bring to boil; simmer 10 minutes, stirring occasionally. Stir in carrots, sliced slanted. Simmer 10 minutes. Stir in broccoli; heat 10 minutes. Stir in cheese and serve.
