GRILLED SHELL STEAK WITH STILTON
CHEESE
 
1 (9 to 10 oz.) shell steak
1 oz. brandy
1 oz. Stilton cheese
1 tbsp. butter
1 tsp. garlic
2 oz. heavy cream
White pepper
Shallots

Grill steak to desired doneness.

STILTON CHEESE SAUCE:

Saute shallots and garlic. Add brandy and cream. Reduce heat slightly. Blend in butter and cheese. Add white pepper to taste.
