GREENIE'S SWEET POTATO PIE 
Pastry for 9 inch one crust pie
2 c. hot cooked, mashed sweet potatoes (about 2 med. potatoes)
3/4 c. sugar
1 tbsp. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. ground nutmeg
1/4 c. butter
1 egg, slightly beaten
1 tbsp. lemon juice
1 tsp. vanilla extract
1 1/4 c. milk or evaporated milk

Heat oven to 425 degrees. Prepare pastry. Combine sugar, flour, baking powder and nutmeg in medium mixer bowl; add remaining ingredients and beat until well blended. Place pastry lined pie plate on oven rack; pour in filling. Bake 15 minutes.

Reduce oven temperature to 350 degrees. Bake until knife inserted in center comes out clean, about 45 minutes longer. Makes 1 pie.
