SPINACH SQUARES 
1/4 lb. butter, melted
3 eggs
1 c. flour
1 tsp. baking powder
1 (1 oz.) pkg. Original Ranch salad dressing mix
3/4 lb. grated Monterey Jack cheese
2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained well
8 oz. sour cream

Beat eggs. Add flour, baking powder and salad dressing mix. Stir in melted butter. Add grated cheese and spinach, spread evenly into a greased 9"x13" pan. Bake for 30 minutes at 350 degrees. Cool at least 30 minutes, then cut into squares. Serve with a dollop of sour cream on top of each square for an added touch.

After cutting the squares may be placed on a cookie sheet and flash frozen. Put into freezer bags and keep frozen until needed. Heat frozen squares 10 to 12 minutes at 350 degrees. Serve warm at room temperature. May also be thawed overnight in refrigerator.
