SPANAKOPITES SPINACH & CHEESE
TRIANGLES
 
10 oz. pkg. frozen leaf spinach, thawed
4 scallions with greens, minced
1/2 c. minced parsley
1/2 c. minced dill
1/2 c. Krinos feta cheese, crumbled
1/4 lb. cream cheese
1/4 lb. farmer cheese
2 eggs
Pepper to taste
1/2 lb. Krinos filo dough
1/2 lb. butter, melted

Squeeze spinach dry and chop. Combine remaining ingredients, except filo dough and melted butter, mix until smooth. Pour mixture into blender or processor and mix. Unwrap filo dough and cover with slightly dampened towel. Work with filo sheet at a time. Brush sheet with melted butter.
